Pink Bourbon was first planted in April 2017 in the Potosí farm. This variety was brought from Ecuador and managed under the watchful eye of the good people of La Esperanza. Pink Bourbons are a hybrid of Red and Yellow Bourbons and is thought to be first found in Pitalito, Huila of Colombia. It is a very hard to nurture consistently due to stronger and more dominant Red/Yellow genes and thus can be considered a rare mutation. Pink Bourbons are also thought to contain elevated amounts of glucose, giving it high sweetness as well as complex but delicate profile.
The Anaerobic Natural processing employed here involves manual and rigorous picking then a 166 hours fermentation in cherry with controlled temperature, making sure it never exceeds 30C. After fermentation, the cherries are set in a mechanical dryer for 48 hours to get the cherries dehydrated. The final step is to dry them on Solar Drying Patios for 9 days.
Roasters Notes:
I’ve always felt that the Pink Bourbon is very feminine (maybe in part of it’s name) because even the flavors are gentle, floral and acidity that’s in abundance yet not harsh. Very high sweetness and a super pleasant coffee. I am especially pleased that the Anaerobic Natural process here done by Esperanza is very controlled and not too over the top. It brings out bonus syrupy fruit qualities which not only adds on to flavor complexity but enhances the body and tactile quality too.
